    • Preheat the oven to 350° F. (175 degrees C). Grease and flour a 9×13-inch baking dish.
    • In a large mixing bowl, combine the sugar, oil, eggs, and 2 teaspoons of vanilla extract with an electric mixer until well combined. Combine the flour, baking soda, baking powder, cinnamon, and salt in a mixing bowl. Mix in the carrots. Fold in the pecans. Pour into the prepared baking dish.
    • Bake for 40 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow cooling for 10 minutes in the pan before turning it out onto a wire rack to cool completely.
    • To make the frosting, in a large mixing bowl, combine the butter, cream cheese, confectioners’ sugar, and 1 teaspoon of vanilla extract with an electric mixer until smooth and creamy. Mix in the chopped pecans. Ice the cooled cake.
